So far I've been lucky enough to find internships that lasted me 8 months and have gotten a 20 dollars an hour salary rate.

Those are mutually exclusive statements. The Engineer will generally make more money than the Machinist making the parts the Engineer designed. Not always the case but it holds true if both are just entering their career.

That being said, Electrical Engineering Technology seems to be your safest bet if you want a mix of getting your hands dirty and making a decent living.
