Many people get lost and call them confusing, but that's the point. You are in an alien dimension, stuff isn't going to be designed like it is in your world.

That impressed by draw distances? All those environments could have doubled as raid zones in any generic fantasy MMORPG. They were about as empty and featureless as raid zones, too. The most impressive thing in DS2 was the enemy designs, but the tradeoff was there were like four of them.

Darksiders 1 had much cooler environments.

If you didn't take some time off from questing just to explore, it's boring, yes, but it was good when you took your time with it.

Skyrim really did have some beautiful locations though, as well as Morrowind and Oblivion. Arena and Daggerfall were good, but didn't have as much as a visual impact.

Not necessarily a good thing in Thief 1's case. Practically all of the undead levels as well as the later Constantine levels were annoying. Also, quite a few of those missions either barely required stealth or practically forced you to fight (otherwise it was a pain in the ass). And yes, the Thieves' Guild was terrible.

Gears of War had really detailed maps.
There was this one level which was in a city, and if you look off into the distance of the map, there are towers pointing every which way. It looked really cool.

The Gears series in general had pretty nice design in its levels.

3 was better about the brownness

It still had a lot of brown, but there were areas where they clearly went out of their way to add color. Like the island at the end after the storm ends.
It wasn't Uncharted levels of color, but it was still nice.

Speaking of Uncharted...
I really liked the design of Shambala. It was pretty amazing when you enter it for the first time.

Thief 2 had overall better levels. Thief's had too many that were combat oriented, and the last level was just a linear path. Admittedly, Thief 2's last level was also pretty bad, but I can't really think of any others that stood out as bad, although repeated that one level twice was pretty lazy.

I feel like any level from Sonic Unleashed HD or Sonic Generations are worth a mention. The day stages surely took a lot of time to design considering how fast Sonic goes.

Well, the final boss of Gears of War 3 is not on rails. Though I feel Gears 3 is much better if you have people to play with, though it is a good game on its own.

We have to list the Ship Graveyard and Cruise Ship segments from Uncharted 3. They were both wonderful game elements but they made very litle sense where they were in the game. Probably would have worked better had they been set at the start of the story. And, in order to make it work better in the story, have Nathan going after that decoder ring thing from the start of the story instead of Sully.
