Because they don't believe it's real life. Everyone in the non-perfect Matrix believes they are just going about their normal day, so they don't do anything they wouldn't do and they don't try to escape.

If they didn't believe they were in the real world because it was too perfect, they'd start trying to get out or figure out what's happening to them.
