Why would the belief we're rich prompt altruistic payments towards our servers to the point where they, and only the food servers, become entitled to such?

A far more rational person would see the fact only food servers expect tips, and only food servers are allowed to have tips counted as compensation towards their minimum wage under our minimum wage laws.
