it is more of a mechanical limitation. there is no pathway for the bacteria to get there. when
the animal is alive, there is no bacteria in the muscle tissue unless
it is a really sick, infected animal. this would be a fucked up animal,
not a normal situation at all. once the animal is butchered, it goes
to the grocery store. unless someone pokes holes in all the steaks with
an awl or a nail or maybe their fingers, then there is simply no
pathway for the bacteria to enter, not in the period of time it takes
the steak to get to your table, assuming standard conditions of our
modern world. like i said, ground beef is different. also, road kill covered in maggots is different. so yeah, don't eat raw cow from a ditch. |
