Modern rice takes either a brown or white colour depending on how it is processed. Brown rice has had the hull removed, but not the bran coating. The bran is what contains the majority of the nutrients, so it is the most commonly used rice in the 3rd world areas like rural China and most of Africa. The west sees the bran coating as unappetizing therefor it is further processed into White rice. White rice has the bran layer polished off by either mechanical or chemical means, leaving it mostly devoid of nutrition.
