It's pretty good, but you have to understand the director was suicidal when he was developing the anime, so there's some emotional stuff that goes down, especially in End of Evangelion. There's also a lot of little things you need to pick up on if you want to understand how certain things work or why certain people feel a certain way, but you can consult the EvaWiki for that. I would suggest it, but keep in mind that any religious symbols mean nothing because the Japanese can't into Christianity or Judaism. Also also, it's only as deep as you make it out to be. Some people only take it as giant monster actiony anime with whiny kids, other people see it as the guide to the universe.

The characters are really what make the show. They're all very distinctive, especially Shinji when you compare him and his development to what was normal in the genre. The original story was also explicit about Kaworu being Shinji's ideal love interest.

Hideaki Anno himself said that the imagery was just that, Imagery. Word of god says it holds no significance or anything of the matter, and even if it did it's much closer to Gnosticism and apocrypha than what you're thinking.
Kaworu isn't Jesus, he's a nephilim, only in his case he's made from humanity violating angels.

As for being a "love" interest, Anno said that the drafts were in line with his intent and that Kaworu was designed as an idealized masculine counterpart for Shinji. It's not stretching it to say that Kaworu is a love interest of sorts.

I just finished watching the series for the fourth time and I'm ready to watch the movies again on blu-ray, such a great anime..
