    So, I'm working on trying to cook new things - I can bake breads and sweets, cook many kinds of vegetables, fish, and produce a fair variety of pork and chicken dishes, but beef is something I've not cooked much before, mostly because of price.

    I've recently come into possession of 3 fucking beautiful bone-in rib steaks and need advice on how to cook them (inb4 ketchup and 'charred'). I don't have a grill but I do have an oven and stove - what's the best way to cook these if I want to serve some sizzling, delicious steaks to a couple of guests?

    Salt way more than you think is necessary

    wait half hour

    scrape remaining salt off

    heat a pan to MAXIMUM with mixed oil in the pan.

    cook on MAXIMUM HEAT for no more than 4 minutes a side.

    finish with a pad of butter into the pan and baste the steak with it.

    rest for 10 min

    Best bet is probably salt+pepper on the meat and some rendered bacon fat in a skillet. High heat 2-3 minutes on each side and you have win.

    For extra win take some mushrooms and throw them in the pan after the steak is done with a little wine. It will deglaze the delicious bits and soak up all the bacon fat.

    OP again, so I'm planning on broiling these steaks, since I don't have a skillet big enough to cook them all at once (they're all the same thickness).

    Any suggestions for interesting food pairings beyond potatoes, rolls, and steamed veggies?

    I have seen people use large mobile iron griddle surfaces (that you might typically use for cooking pancakes) for steak cooking, quite successfully.

    It still stands that you want to preheat your griddle surface in the oven until it is unrealistically hot.
