    I'm watching the potato episode of Good Eats and Alton is making the gratin. It reminded me of another potato dish that is similar, where the potato is sliced and layered and you cook it with cream. Then you put a weight on it to press it and chill till it sets. It's not scalloped or Dauphinois

    Any time I want to cook something new, I go to YouTube. There, you see the method, but you don't need the same exact ingredients. I'm going to be making a spicy fish soup soon. ^_^

    First, watch and actually get out there and cook what Alton Brown teaches you. He teaches the basics. After you think you know your way around the kitchen, you can start to appreciate the less-involved / recipe-based shows from legendary chefs such as Gordon Ramsay.

    Alton Brown and Gordon Ramsay are both great chefs, but they preach to different audiences. Start with Alton then move on to Gordon.
