    Dear /ck/

    Where are your favorite places to get fried chicken?

    Wal-mart has me oh lording while waiting in line at the deli counter waiting to get the chicken cause it looks and tastes so good and when I go to Popeye's I get two meals cause I can't decide which one to get they all sound tasty.

    Those two get my vote

    Church's before they closed a couple of locations leaving me with the nearest location an hour away. Now, I'm forced to eat at KFC. I only like the extra crispy. Also, for some reason, they make me sick. Other than that, I prefer rotisserie from Costco.

    flour with a liberal helping of salt, pepper and bell's seasoning. enough you can see the pepper and smell the bells.

    eggwash.

    soak parted chicken in buttermilk overnight in fridge.

    eggwash, dredge, wash and dredge again.

    fry parts in large cast iron skillet with 3/4 inch v. hot corn oil. oil's ready when you can't hold your hand over the pan and spittle skitters.

    breast in the center, thighs to the left and right, drums top and bottom, wings in the corners. 10-12 minutes on one side, 8 minutes on the other.

    drain and rest for 10 minutes and serve.

    Yeah, they franchised out. Apparently they're all the way down in Puerto Rico now. At least the place I typically go to hasn't changed. If for no other reason than I can tell people I get my fried chicken at a gas station.
