    This is something that has bothered me for a while /ck/...

    Why is there such a lack of cheese in Chinese and (what I assume) Japanese cooking? Is cheese just not that big in their cultures?

    The easiest answer I can give you is because it's probably a cultural thing.

    Or maybe because the vast majority of Asians in general are lactose intolerant.

    I have trouble digesting ice cream for example. It gives me a case of the runs.

    You're lactose intolerant became you ancestors didn't drink milk or consume dairy products. From what I understand, people in the northern regions of the world consumed milk during winter, including Mongols, Tibetans, Indians(Hinduism) and most Europeans etc. when there were few other sources of sustenance.

    That's not quite true. While they don't have "cheese" in the typical sense(using rennet/other coagulants), they do have farmer's cheese/paneer which is pretty much strained cottage cheese. It's probably because of the large Hindu population that can't consume rennet.

    It's also usually disgustingly salty to preserve it. Ick.

    Kobe beef is a modern invention, the terrain of Japan creating several distinct breeds however, made breeding desirable traits(read fat) much quicker. Beef came from working animals, and it was considered unclean to eat, which goes against Shinto. Some sects of Chinese Buddhism that were brought to Japan along with the actual cows themselves forbade eating meat due to a popular legend or some royalty being reincarnated as a cow. During the Tokugawa shogunate, consuming 4 legged animals was forbidden. Only in 1868 I think during the Meiji period was this ban lifted to adopt European beef consuming customs. However, it took decades for beef consumption to catch on with the general populace.

    This is true for the most part, and pigs tend to have nice fat development(bacon, anyone? which actually comes from the belly instead of the back as the name implies, unless you're Canada). However, bovine beasts were used commonly to pull carts, carriages, transporting things, plowing etc. General beasts of burden. As mentioned before, there is also a legend of some royalty being reincarnated as a cow, so it is particularly bad to eat beef.

    Think about it this way. Yes, there is cheese on there. But that is one slice for three bun slices, three meat slices, and other crazy additions. If that were American, or even European, I can guarantee that would have at least the same amount of cheese per slices of beef - if not more.

    Japanese didn't really eat red meat til the Europeans came.

    Also, there is no lactose in aged cheeses. So, lactose intolerance is not a good reason.

    Its the evolution of dairy products. To end up with lactose free cheese, you have to start with milk, and lactose filled non-aged cheese. I also suspect people with the actual enzymemes for digesting lactose, would evolve to prefer the taste of cheese. At the very least, it would not trigger a bad response. When you are introduced to a new food, then get sick following consuming it, your brain will associate the sickness with the food and you will hate it immediately.

    Caucasians are the only race that can digest milk after the first three or four years of life. Since we could tolerate it, we promoted and developed this practice further. East Indians are technichally caucasoid, so there you go. And indeed, some orientels do make and comsume cheese, like yak cheese, as that other fella said.
