    So, I recently used Alton's excellent guide to buying and breaking down a PSMO (Tender is the Loin, Parts I & II) for Christmas dinner with the family. My problem is that I do not personally own a grill yet due to the nature of the apt. complex I live in (i.e. no room outside for one). My parents do have a propane grill. I have a gas stove with broiler.

    So here's my question: How do I cook the steaks? I never liked the taste of steak in a skillet cooked over a range. I know lots of restaurants will do that but I never think it tastes right. I might be doing it wrong.

    Now, I read that I can broil to sear the steaks and then finish in the oven. Which I also know several restaurants do, but I am not sure how the steak will taste broiled vs. grilled.

    I've always grilled my steaks before, so that is what I am leaning towards, but it is going to be a bitch to get access to the grill to do it.

    Any thoughts? Is there any way I can recreate the grilled taste with the broiler? Or am I just going to have to break down and get out the grill?

    Barbeque. Nothing like a succulent piece of beef seared over a huge hunk of iron, and finished over flames for a perfect smoked/mildly burnt taste.

    OP here, have you noticed any functional difference in how they taste when you eat a grilled steak? I have some other non-PSMO steak I am going to be using as a test for whatever I choose as my alternative to grilling - but I don't want to waste the meat by fucking it up.

    Well, you're definitely not getting the same sort of char or nice grill lines or anything like that. When I do eat a grilled steak, it's generally off of a charcoal grill, and that's of course a completely different animal due to the taste of the charcoal.

    Yeah. I figured a propane grill would be close enough the broiler to give it a try. I really need to buy a side of beef and grill the whole damn thing over charcoal. I am a bit inexperienced when it comes to charcoal grilling.

    Honestly OP, grilling is the last thing you want to do to a good steak, it dries it out and you lose all the juices. Pan fry you steak in butter with a clove of garlic rosemary and sage. Take the steak out to rest, and add a good red wine to the pan to deglaze, then reduce. The creaminess of the butter will make the sauce godly.

    Forgot to tell you to not season your steak with salt and pepper until it's just about ready to come out of the pan, otherwise the pepper will burn, and the salt will cause the meat to lose liquid.
