living in the philippines. one of the most delicious dishes here in our town is called "kare-kare". stew made from peanut sauce mixed with vegetables and pork or oxtail. best with "bagoong" (fish/shring paste) its a must-try and has already earned its reputation worldwide if you ask me.

Nope, they are not supposed to be dry. (Altought they are sometimes literally drown in sauce) This happens when they are heated in microwave and not in steam how it should be done. Or the dough is poorly made with too much flour.

Yeah, sadly most of the restaurants in centre became tourist traps with the same enormly expensive boring food (and not great quality, sauces made from powder...etc). :) I hope you visited some good classic restaurant, but I guess not.
