Okay, that ones legit. Its not uncommon to have a bartender start a cocktail by putting ice in the glass, putting booze in the shaker, then dumping the ice from the glass into the shaker. The part about the carbonation had to have been a joke, though.

no, its not. carbonation is disssolved CO2 in solution, for every mole of solute per Kg of water there is a 1.86 degree celcius depression in freesing point, so as it destabilizes the ice matrix acting as a solute, it drags the melting point down, and as there is still not enough energy to melt the solid ice (as ice takes 3.3X10^5 joules per kg to melt) the temperature drops signifigantly.

also, liquids Eg seltzer conduct heat faster than air that would be between the ice and the glass.

    with regards to this,
i have friends who wont put boiled water into their cup of instant coffee because it burns the beans. they will mix the instant powder and sugar with milk first.
    does this make a difference?

I developed that lid technique myself when I was learning to cook as a kid, I would add a little water to the pan so the egg gets steamed, it also prevents the edges from burning at all. that woman should have had her hand cut off for stealing my time.

Instant coffee is bad enough. Adding any off flavors shouldn't improve it. I think there's probably some validity that reconstituting coffee doesn't require wicked sterilizing temperatures, just warmth. I usually microwave milk to steaming hot 1.5 mins, not boiling, and add that to coffee and sugar in the bottom of my mug. Making a latte, with the creaminess of milk, seems to ignore the negative bitter or off flavors of instant coffee. Also, I buy cuban or italian instant espresso ideally. Barring that, publix instant is minus all bad flavors, amazingly. But, all instant coffee has air as the enemy, so seal it well, open and close it quickly, and don't buy quantities beyond what you would use quickly, once opened.

It's sous vide, and it is a technique that has been adopted by most top chefs (although using an actual sous vide machine and not a fucking sink). The video did not explain why the technique is useful, but it uniformly cooks the meat without overcooking it. Using sous vide, a piece of meat is uniformly medium rare/rare without just being so in the middle. The pan is only meant to briefly sear the meat.

This video explains the technique better:

It's essentially an idiot proof way of cooking meat. There's no way you can possibly overcook your meats (except during the sear). But it does take a long time, which is why it's mostly used in restaurant.
