    CK, quick, I need your help.
    I need to cook a meal for a vegetarian tomorrow and I've only ever eaten meals with meat.
    How can I make something that is vegetarian, delicious, and will appeal to my carnivorous tastes so that we may all enjoy the meal!

    Mushroom, Spinach and Potato Bake
    Prep: 20 Mins
    Cooking Time: 1 Hour
    Serves 4

    1kg (2lb,2oz) Floury Potatoes
    8 tbsp Full-Fat Milk
    125g (4½oz) Butter, cubed
    500g (1lb,2oz) mushrooms, 1.5cm cubed
    4 Garlic Cloves, roughly chopped
    4 Spring Onions, cut into 2cm lengths
    1kg (2lb,2oz) spinach, washed and roughly chopped
    200g (7oz) Fontina (or other nutty semi-hard cheese), 1cm cubed
    Pinch of Nutmeg, Freshly grated

    1. Peel and roughly chop the potatoes. Boil in lightly salted water for ~12 Mins until tender but not falling apart. Apply skewer test if necessary. Drain well, return to the pan and mash. Add the milk, nutmeg, and ½ the butter. Season well. Beat with a large spoon or electric whisk until reasonably smooth. Spoon 1/3rd of the mash into a baking/casserole dish.

    2. Preheat the oven to 180°C/Gmark 4. Add ½ the remaining butter to a frying pan over a medium heat. Add the mushrooms, garlic, and spring onions and fry gently for 10 minutes until golden. Spoon over the potato mix in the dish.

    3. Add the remaining butter to the frying pan, and cook the spinach for 5 Mins, stirring, until just wilted and tender. Season, and spoon over the mushrooms in the dish.

    4. Spoon the remaining mash over the spinach, and cover with the cubed cheese. Bake for about 30 Mins until the cheese is bubbling and golden.

    Potato, Cheese & Onion Pie
    Prep: 30 Mins, Plus 10 Mins Cooling
    Cooking Time: 1 Hr 15 Mins
    Serves 4

    455g Fresh Shortcrust Pastry
    455g Waxy Potatoes, Very Thinly Sliced
    1 Small Onion, Very Thinly Sliced
    100g Red Leicester (Or Hard Cheese), Finely Grated
    Salt & Black Pepper
    145ml Cream

    1. Preheat the oven to 180°C/Gmark 4. Roll 2/3rds of the pastry onto a lightly floured work surface, and use it to line a 23cm flan dish. Arrange the potatoes in a single layer over the base of the dish, then top with a layer of the each of the onion and cheese, seasoning well between each layer. Pour over the cream.

    2. Roll out the remaining pastry to make a lid. Lightly dampen the edges of the pie with water. Place the lid on top and pinch the edges together to seal well.

    3. Bake for 1 to 1¼ Hours, until the potatoes and onions are tender. Leave for 10 Mins before serving to allow the cheese to cool slightly.

    NOTE: Waxy potatoes are best for this recipe as they hold their shape well. Serve the pie hot with lightly steamed cabbage, or cold with a crisp salad.

    There's a million different ways to make potatoes. You can do an onion tart. Make a quiche. Serve some steamed vegetables: green beans, carrots, corn, yams. Serve peas. Make a vegetable or egg curry and serve with rotis (bread) and/or rice. Make rice with beans or lentils. Serve pasta with a tomato sauce or a basil pesto. Make pumpkin soup, or leek and potato soup, or borscht (beetroot soup), or brocolli soup or tomato soup. Make a salad. Serve fresh fruit. Serve canned fruit. Make a cake. Make a tart or a pie or a cheesecake. Make chinese style fried rice. Make noodles. Make fried noodles.

    Cheese is the best way to make something wholesome and tasty, without adding meat. If they are vegan, you shouldn't be friends with them.

    i made the greatest fettuccine alfredo last night hnnngh. used a bit of whole cream in the sauce. also some garlic, egg, parmesan cheese. very good- only issue is reheating it. never tastes as good so i recommend making just enough so the two of you are full.
