    I used to go to this little place that had an appetizer that was red and white sauced cabbage and two kinds of chickpea salads I couldn't identify for the life of me, meant to be pocketed into flatbread. Lamb shish tawouk! Rolled dates for dessert. Fuck and damn yes.

    There was a seminar held by the local spice shop here that was a three day course on making middle eastern cuisine. Couldn't afford it. Still bitter.

    i wasn't picking things up that fast because it was getting closer and closer to finals. it's not that i was lazy but my boss worked non stop while his family he employed took it pretty easy. the last day i was there i used the arabic mop/giant squeegee incorrectly. my boss was out sick so his mom was out back waiting for me to finish and his sister was sleeping on a couch inside. i thought i was using it correctly but when the mom came to lock up she saw that i did it wrong and started screaming (she doesn't speak english), not directly at me but it was embarrassing and humiliating none the less

    I've only had what I can buy in the United States, but I've liked it all.

    I actually patronize a restaurant /every/ Tuesday. Baba ghanoush with pita, and a gyro with marinated onions and labneh. That's $40 of business every month, and Mahmoud loves me "so very much".

    It's my favorite meal. I saw a thread on here earlier, but I was too lazy to contribute. The topic was "one meal for the rest of your life" or something. That's my answer!

    The closer to the sea, and not the desert, and the more green herbs and fresh vegetables in something, the more I like it.

    Turkish coffee, greek coffee, it's alright, but with cardamom it's fabulous. Rose water in the custard, pomegranate with the tzatziki. I just dont like overcooked rice dishes. I could probably live on delicious Mediterranean food the rest of my life, though. Marinated eggplant and peppers, falafel, hummus. My only issue is the fish for breakfast thing.

    That's the point of pita bread. Works the same way with Indian naan and Ethiopian injera. It's kind of like using a tortilla chip to scoop up some salsa, except the bread isn't fried (though it can be, i.e. fried pita with hummus).

    Your example is in a home or family-style restaurant. It's analogous to getting a large plate to share with one or more friends. You can serve yourself on a smaller plate or just reach in and grab a bit. Different culture, different customs. You would still utilize the bread as an eating utensil even if you were eat from your own individual plate.

    Iranian here. This is Sabzi Khordan, which basically translates to "eating greens". A bunch of different herbs/vegetables mixed together and served alongside certain Iranian dishes. My mother likes to use basil, mint, terragon, dill, green onions, and radishes most of the time.
