  • We are still working on some of the outstanding CloudFlare issues. We are aware of an issue affecting IE users where all images are saved as BMP and are working on a fix. We will also be sending proper Last-Modified headers on HTML starting early next week (works on our end, waiting on a fix from CDN).     Is there an official Thanksgiving meal thread? I didn't see one so here it goes. Go ahead and share what you are making.

    I'm doing all of the traditional thing. My favorite way to do turkey is to put some garlic, onion, and apple inside and season the outside with some thyme and rosemary. That shit is delicious.

    my aunt who's having us over for turkeyday dinner wants to do a "wine tasting" i put it in quotes because we'll be supplying the wine. i'm not a wine drinker, i like beer. good beer. i'm thinking of bringing a biere de garde, considering it'd go well with dinner, but also has similar aromas: cherries, dark fruit, oak, spices etc.

    My parents are divorced. My mom's severely manic-bipolar so she gets my sisters and me for Thanksgiving lest she go into a manic phase and keys our cars or something. I'll see my dad for breakfast on Friday. In the meantime, I'm cooking dinner tomorrow. I'll try to take photos as the dishes get prepared and come out, but here's what I have planned:

    Turkey (duh) with stuffing placed after the turkey is cooked
    Gravy made from the drippings
    Roasted Sweet potatoes
    Vegan Mashed potatoes (my cousins are vegans, and I didn't want to leave them out entirely)
    Salad
    Cranberry sauce* (store-bought)
    Cherry pie (or maybe Apple pie)* (also store-bought)

    And we're Arab, so we're going to add to the traditional spread:
    Tabouleh
    Dolmeh
    (probably) Rice

    This is going to feed about 10-12, hopefully leaving just enough leftovers (not lots of rice left over) to stay good for us to coast for a few days after the dinner.

    Nothing's *finished* although the gears are already turning. If someone has any suggestions, I would benefit greatly and appreciate immensely any words of wisdom or suggestions you might have.

    I like to take about 1-2 sticks-worth of softened sage rosemary and thyme compound butter and spread it evenly under the skin of the turkey. I then take about 1 and a half lemons and juice them for some other application wedge them then take the remaining wedges and a liberal handful of rosemary+thyme sprigs and stuff the turkey with them. Makes a really delicious moist turkey. As for mashed potatoes I'm simple and just like some yukon golds with a bit of sour cream, butter, salt and lots of coarse pepper.

    Stuffing is good but I prefer fresh made rolls or biscuits and a fresh sauteed veggie like asapragus or baby broccolli on the side.

    Using the turkey drippings I like to make a red wine mushroom gravy to put on the potatoes and turkey.

    I drink red wine and a glass of peligrino with the lemon juice in it that I saved earlier. For dessert nothing beats fresh homemade pies. Pumpkin, apple, etc.

    I got invited to my first Thanksgiving (I'm not from the US) and we're kind of sharing the workload as we're poor Erasmus student - I'm in charge of dessert.

    If you have a microwave you can actually make mashed potatoes because you can steam them in there or even cook them without water (just make sure to turn them). It is a staple of thanksgiving, it is extremely cheap to make and aside from cooking the potatoes all you need is a big bowl and a big spoon (although a potato masher would be a big help)

I'm kinda winging it but what I plan to do is simmer the giblets heart wingtips and neck in some chicken stock then finely chop the meat. I'm gonna deglaze the duck roasting pan with some wine and the stock then thicken with a duck fat roux and add the chopped giblets.
