    Picked up a porterhouse steak at the local butcher shop. Is there some special way of cooking a cut of steak like this?

    What you want to do is get your oven very very hot first. Sear that bad boy and place under the broiler for only 5 minutes. Basically, with a steak like that (or a t-bone, or ribeye, or any good cut of steak) you want Very hot and very fast. Fast hot sear, fast hot oven. And if you want to be super fancy, put a tablespoon of herbed garlic butter on top as soon as you pull it out.

    The Porterhouse is kind of a composite steak coming from the point where the tenderloin and top loin meet. Basically an over-sized T-Bone steak the porterhouse is thicker cut and has much more of the tenderloin relative to the loin portion. If you remove the bone and cut out the two steaks that basically make up this steak you will get a tenderloin steak and a top loin (or New York Strip Steak).

    that is a good looking porterhouse. and you asked. so I will tell you. sprinkle a bit of salt and black pepper.put a bit of oil in a pan. sear on both sides. finish in 400f oven until done to your liking. less is better. you can always cook a steak more, but if over done you cant make it more rare. let rest while you slice a tomato, and open a beer. medium rare. red to pink, melt some butter on top. friends come over. alright.. you can have some ( grudgingly) Hey , I said a little.... save the bone to make beef vegtable soup. seriously, thats a good looking steak, and well out of my price range. like lobster or scallops.

    porterhouse is a t-bone, but the tenderloin side ( most tender) is much larger. and harder to cook well. around where I live western nc usa, tbones graded choice are about 9-10 bucks per lb. a porterhouse, about 14-16 per lb. and since porterhouses are usually at least 1.5 inches thidck, you are talking 20 bucks per steak. and that is choice, not prime graded. buy the way, I have family in the Bristol area originally from whales. nice talking.
