    I cook my steak like a real man. I pound it with a tenderizer until's its less than a cm thick and fills my medium sized frying pan. I then cook it on a medium heat for 6 minutes either side so that there isn't even the slightest taint of pink in the centre.

    Next time, get your pan as hot as it will go. It should actually start to turn white ash in middle. Get a lazer temperature gauge if you can. Place steak, and DO NOT MOVE STEAK. 1.5 minutes - 2 minutes per side depending on thickness - that is all. You will thank me. Let rest also . . .see all that juice on your plate, it should have stayed in your steak.

    Well imagine all the heat coming in from the bottom agitates the water in the steak. since it can't very well go out the bottom, it moves away from the heat (aka into the middle), along with the other beef juices.

    If you immediately cut into a steak after cooking it, the center will be very wet and the outsides dry. By giving it time to cool down (just a few minutes) and taking it away from the heat, the juice gradually travels back from the center for an even texture.
