    Vegetarian food thread.

    For those who simply want to eat healthier, or actually just give a shit about animals.

    Ingredients

    * 2 teaspoons olive oil
    * 3/4 cup chopped onion
    * 3 cups water
    * 2 cups diced zucchini
    * 1 cup diced carrot
    * 1 cup drained canned cannellini beans or other white beans
    * 3/4 cup diced celery
    * 1/2 teaspoon dried basil
    * 1/4 teaspoon salt
    * 1/4 teaspoon dried oregano
    * 1/8 teaspoon coarsely ground pepper
    * 1 (14.5-ounce) can diced tomatoes, undrained
    * 1 garlic clove, minced
    * 1/4 cup uncooked ditalini (very short tubular macaroni) or elbow macaroni
    * 4 teaspoons grated Parmesan cheese

    Preparation

    Heat oil in a large saucepan over medium-high heat. Add onion; sauté 4 minutes or until lightly browned. Add water and next 10 ingredients (water through garlic); bring to a boil. Cover, reduce heat to medium-low, and cook 25 minutes. Add pasta; cover and cook an additional 10 minutes. Ladle into individual bowls, and sprinkle with cheese.

    I am a vegan, and as such I must let everyone know. You see, as a vegan I have self esteem problems, and by letting everyone know of my ethically and morally superior lifestyle I am proving I am better than you.

    You see, I have a psychological impairment that does not allow me to differentiate between animals as food and humans. You know how pets like cats and dogs are bread with certain characteristics to make them more appealing to humans, well its like that except I am attracted to, I mean I feel for all the worlds animals.

    I am educated (obviously as a vegan more educated than you) and believe in evolution. The traits that humans exhibit such as, poor ability to digest plant matter (I do fart too much and my breath wreaks), omnivore digestion system and lactose tolerance past adolescence are things I don't understand because its just carnivore propaganda that everyone just calls proven facts.

    I, being so in tune with nature, only eat organic. Even though organic food means nothing, I choose to believe it makes me better. The food I eat is so natural, even though I must eat lots of heavily processed foods (like soy) fortified with nutrients (mostly made from the byproducts of bacteria one would never eat) I can't get just from plant life. And because it is not possible to maintain my health using only local plants, the extra carbon created by all the hauling of foods from around the world to me is offset by how awesome I am.

    Vegetarian spaghetti sauce:

    1 lg. onion, chopped
    12 fresh mushrooms, chopped
    3 tbsp. butter or olive oil
    1/2 tsp. instant minced garlic
    1/2 tsp. oregano
    1 tsp. basil
    1 tsp. mint leaves
    2 to 3 bay leaves
    1/2 tsp. sugar
    Salt & pepper to taste
    1 (28 oz.) can pear tomatoes
    1 (6 oz.) can tomato paste
    1 3/4 c. water

    Saute onions and mushrooms in oil or butter in a 3 quart saucepan. Add garlic and herbs and spices. Stir and simmer 3 minutes. Then add tomatoes, tomato paste and water. Simmer uncovered 30 to 60 minutes. Stir occasionally to prevent scorching. Yields 4 generous servings.

    Veggie chili, one of my favorites.

    Ingredients:

    * 1 can black or pinto beans, drained
    * 1 can kidney beans, drained
    * 1 can diced tomatoes
    * 1/2 onion, diced
    * 3 cloves garlic, minced
    * 1 bell pepper, diced (any color)
    * 2 tbsp olive oil
    * 1/4 cup vegetable broth
    * 2 tbsp chili powder
    * 1/2 tsp salt
    * 1/2 tsp pepper
    * dash cayenne pepper (optional)
    * dash red pepper flakes (optional)
    * 1/2 cup TVP + 1/2 cup water (optional)

    Preparation:
    In a medium to large soup pot, sautee the onion, bell pepper and garlic in the olive oil.

    Add tomatoes, vegetable broth and chili powder and stir.

    Reduce heat to medium low and add beans. Stir occasionally and cook for at least 20 minutes. Add TVP and water 10 minutes before done cooking. Of course, the longer you cook chili the better, but if you're pressed for time, 20 minutes is fine.

    My ten-year-old half-sister decided she's vegan a few years ago.

    Unfortunately, she's still a little kid and has an aversion to vegetables, whole grains, beans, or anything nutritious at all. It's really unnerving to spend time with her. She won't eat anything other than candy and cheap as shit pizza. Sometimes you can tell she gets exhausted or cranky from low blood sugar but she just won't fucking eat. She's also really small for her age and I can't help but think malnutrition has something to do with it.

    Her mom spoils her fucking rotten and my dad can't say shit about it, really, since her mom and him are separated and he only sees his daughter a few times a year. It drives me fucking crazy. She's going to develop low bone density or something before she even hits puberty.

    Peppers, Sweet, Red, Raw (19 cals) 0.65 x 1 cup, sliced
    Garlic, Raw (3 cals) 0.65 x 1 tsp
    Broccoli, Raw (20 cals) 0.65 x 1 cup, chopped
    Peanut Butter - Trader Joe's Organic Creamy PB (200 cals) 2 x tbsp
    *Tofu, Firm, Prepared With Calcium Sulfate And Magnesium Chloride (Nigari) (110 cals) 1.25 x .5 cup
    Barilla Plus Rotini Pasta (262 cals) 1.25 x Two Ounce

    Meal Recipe:
    Cook pasta. Steam broccoli until almost tender = al dente. While pasta & broccoli cook, make sauce: puree together the peanut butter, rice wine vinegar, soy sauce, lime juice, garlic plus a pinch of cayenne and 1 tsp water. Toss sauce over tofu. Slice red pepper into thin strips. When pasta & broccoli ready, gently combine all ingredients. Chill in fridge & serve.

    Makes 4 (small) servings (160 calories per serving)

    *I have no idea what nigari is, but you can just use a plain old firm tofu and drain it before using. Or you can lightly toast it like I did.

    i once tried out vegetarianism. i think it was like eight years ago and it lasted for maybe a year. then i accidentally a whole deep dish peperoni pizza one night. being a good vegetarian, i of course shamefully thought to myself that it was only a one time thing. but the huge shit i eventually pressed out after that meal was actually such an eye-opening epiphany that i dropped the whole veggie bullcrap then and there. never looked back.

    Protip: The USDA and FDA exist specifically to keep shit like that from happening. Yes, food animals like cows, pigs, and chickens live a majority of their lives cooped up, and I can't say I don't feel bad for them. But they're not tortured, they're kept healthy, groomed, and well fed, and they don't have to worry about shit until they do what all prey animals are specifically born to do in the wild. This is a lot more than can be said for a lot of humans these days.

    And what do these people want to happen, exactly? Factory farms to get shut down? "Better living conditions" for meat animals? If every animal had "roaming" space, production costs would skyrocket and output would plummet simply because they wouldnt have enough room for all the animals they currently do. The price of meat would triple (probably more) within a year, resulting in a huge demand for produce; a demand that there is no way in hell farms could keep up with. Tens, perhaps hundreds of thousands would starve, and thousands more would be driven to poverty.

    Factory farms being shut down outright would result in a food shortage on such a scale that the country would literally fall down around our ears.

    These people have no idea how much food these places put out on an annual basis, nor how much we depend on them.

    And you'd have widespread protein deficiancies. Currently our factory system is geared to produce corn and wheat, not legumes, which is the only way to get complete protein from vegetable sources. And lentils aren't as cheap to grow as corn.

    Our entire system is out of whack. There's nothing wrong with meat per se - however the feed does matter. It's why farmed fish aren't as good for you as wild, they're full of omega6's from the corn rather than omega3's from the algae.

    But when you see a population growth of 300% in 2 generations there's always gonna be problems. The main issue is that every bushel of crops right now takes too much oil to make and distribute.

    I'm a pretty dedicated carnivore but I give respect to a solid vegetarian meal if it can stand on it's own as good food, without bringing morals or ethics to the table. Tofu treated as faux-flesh is an abomination. Tofu treated as just another food product can be amazing.

    For the most part, the secret to good vegetarian food is to look to cultures with a long tradition of vegetarianism. Indian, Asian and Ethiopian come to mind when I think of food that has centuries of trial-and-error behind making something that looks good, tastes good & is properly nutritious.

    With Western food, you're mostly out of luck. Even in times when meat was very expensive, the poor insisted on putting -some- of it (or making due with low-quality cuts) in their food. Going meatless is, for the most part a recent thing, so most of your recipes involve trying to make familiar foods, which results in lots of bad meat substitutes.

    One of the few Western groups that comes to mind as having a meaningful vegetarian tradition in The States would be the Seventh Day Adventists - I think they're theology is a little weird but they're probably a good resource for western-style veggie recipes.

    Oh, yeah - I'll take a good spicy black-bean burger patty over a so-so burger any day of the week. The best, however, is to have a double burger with quality examples of both.

    PAPPA AL POMODORO


    6 tbs. extra-virgin olive oil
    4 cloves garlic, chopped
    2 bunches basil, chopped
    1 pt. vegetable broth
    3 lbs. ripe, peeled and seeded tomatoes, cut into large pieces
    2 loaves day-old country bread, cubed
    salt
    black pepper, freshly ground


    Heat 4 tbs. olive oil, 3 cloves of garlic and half the chopped basil in a saucepan over a low heat. Do not brown the garlic. Add the tomatoes, cook for 20 mins. and set aside.

    Mix 1 tbs. oil, the rest of the garlic with the bread cubes in a baking pan. Add salt and pepper to taste, and bake until golden. Add stewed tomatoes to the bread and the broth; cook for 10 more mins.

    Serve into single soup bowls adding the rest of the basil and a dash of extra-virgin olive oil.

    9 oz. chickpea flour
    4 tbs. olive oil

    scallions
    salt
    pepper

    Version 2:
    Sieve the chickpea flour finely. Pour it slowly in hot water and stir and stir. Cook slowly for about on hour, stirring often. The mixture will come off the sides of the pot when ready. Season with salt and pepper. Pour into serving dishes, drizzle with oil, chopped scallions, salt and pepper and serve hot.

    Olive and Brocolli torte

    4 eggs, separated
    7 oz. Ricotta cheese
    1 lb. broccoli florets
    24-30 olives
    1/2 oz. grated parmesean or romano cheese
    1 oz. grated breadcrumbs
    1 tbsp. chopped parsley
    butter
    salt and pepper

    Pit the olives and chop with the raw broccoli florets and parsley.

    In one bowl whip the egg whites. In another mix the ricotta cheese with the egg yolks, the grated cheese, salt and pepper. Then add the chopped olives and broccoli. When this is well mixed, delicately fold in the egg whites.

    Butter four ramekins, dust with the breadcrumbs and pour in the mixture up to the rim. Place the ramekins in a baking dish with water. Cook in a pre heated oven at 325°F for about 20 minutes. Remove and serve hot.

    Dude, modern threshers and sorting machines are pretty versatile. Lentils are easy to harvest, you just tap the plant on a sorting table and the edible bits fall through a mesh. Exactly how dried corn is seperated from the cob.
