    Hey /ck/, what's the best way to cook a turkey? A family gathering is at my house and I need to know how to cook a turkey to serve.

    Thaw completely, or kill and clean one yourself. Pat dry.
    Remove innards. Save for stuffing. Loosely stuff cavity with onion, carrots and celery. Rub kosher salt into the skin.

    Put this in a roasting pan with a rack. Put it into the oven at 450 degrees for 30 minutes, then lower the head to 325 and let it cook for 15 minutes per pound of bird. During the last 30 minutes remove the boob tent and baste the whole bird with pan juices.

    Insert a probe thermometer into the thigh not touching the bone. When it reads between 175 and 180, the bird is done.

    Make some stuffing during all of this as a casserole. I make an oyster stuffing that goes over well, if anyone likes, I can dig out the recipe.
