While I might not rate these shows as "best ever", here are a few other animes I personally have a soft spot for.

Azumanga Daioh, probably the most relaxing show ever made.
Excel Saga, made of pure energy and WTF.
Galaxy Angel, for managing to be consistently funny for a whopping four seasons (just don't mention that spinoff series...) and making fun of every trope (sci-fi or otherwise) ever.
Hajime no Ippo - someone else here suggested this already, and I myself never thought I'd enjoy watching a sports anime, but even in its formulaicness the series somehow manages to be thrilling every single match.
JoJo's Bizarre Adventure - six episodes of crazy awesome stuff and source of many a 4chan meme.
Oh My Goddess!, fairly standard magical girlfriend comedy, but it was the first manga I read, and the new TV adaptation was also fairly good.
Sayonara Zetsubou Sensei, for actually going for some (tongue-in-cheek) social commentary among its jokes.
