what type of fabric is recommended for the tan shirt/pants?

gloves are easy, goggles should be easy but i haven't checked any stores yet. boots should be fairly easy to find or mod.

the vest and satchel bag look like they're the same fabric, but again i'm at a loss for what to use.

Vest and bag look like pleather, maybe. You could try a cotton twill for the rest of it; it's a semi-durable, simple fabric that would probably wear well for someone living a life like Heihachi's.
