Make a prop piece of toast or something else she is known to carry around. It will help you pose better for photos too.

I might bring a sign or something, maybe a loudspeaker (the plastic kind) or something Haruhi-ish.
All else fails, I seriously WILL bring a piece of toast and eat it throughout the day until it goes bad.

You can't. That's a simple costume, a dozen other girls will be wearing it, and most of them won't have their hair getting flat and frizzy by the end of the day.

If you wanna be Haruhi, use one of her more Unseen outfits.

Get a piece of 1/2 inch foam, cut it to look like a slice of toast, and paint it brown around the edges with a little brown in the middle to look toasty.

For Haruhi, the hair thing is true.

However, for other cosplays that require unnatural coloured hair, if the dye job is done VERY WELL and accurately, it can sometimes get you more attention. (This has been the case for me.) But it really depends on the cosplay.

Yeah, I was originally considering going with this Haruhi outfit, but we don't really have the money for that right now.
So boring blue and white uniform is what I'm left with.

Also, yeah, I know what you mean. I've seen some pictures where a great cosplay is ruined by a bad wig. And if I WAS cosplaying somebody like... say, Nia, with bright yellow/blue hair, I'd probably dye my hair blonde and blue, just so it'd look more natural.
