Think about it from the builder's point of view. Titans are rampaging around, fucking shit up. Most of humanity is already dead by the time we hatch a city-with-giant-ass walls plan, or even just a city-protected from titans plan. Let's look at the options you presented only, for arguments' sake. If you build it on an island, you are not likely to be able to produce crops because of the salty soil. While obviously many crops can grow there, it's not as good for agriculture as many other places. So that humans can sustainably survive in the walls for an indefinite amount of time AND have spare resources to defeat the titans, the location would have to be as hospitable to life as possible. I suppose they didn't put it in a rainforest (though it has the most free energy to use, and is therefore most hospitable to life, it is such a good place to live that there has been a shit ton of competition, leading to poison-ass animals the rainforests are known for) because they lacked the necessary geographical features. Which brings me to the most common and obvious consideration - the geographical feature. The wall in SnK is built around a mountain. This means that it is easy to make each wall stronger than the last, with humanity always moving to a BETTER (ie higher) vantage point as the need arises. In retrospect, this is strange because mountains have notoriously inhospitable soil. It is possible that they created a man-made hill, preferably using topsoil from places we aren't going to use. An island's only geographical feature is being surrounded by water, and it's inaccurate to say it is the same as being surrounded by a hole. On the east coast (of Amerifats), islands tend to have beaches without rocky cliffs. This is unsuitable for protection because, assuming titans don't drown, they can literally just walk to your island. On the US west coast (and from anime portrayals and geographic proximity, Japan), many islands and coastlines have huge, rocky cliffs.
