I've had real Ramen before. As in Ramen from a streetside stall.

It's...underwhelming. Having tried several different flavors from several different locations they all taste fairly similar broth-wise and only differ a lot in the side dishes and the meats.

I have tried authentic Pho in Hanoi and Chinese La Mian as well. And they are clearly superior in taste AND variety. I'm really big on soup noodles so having found something I can be ecstatic about is a big thing for me.

The flavor in Ramen is nearly entirely from the broth and meat.

If you eat Ramen with mediocre broth, it's going to be mediocre.

Tonkotsu Ramen is a broth made by boiling pig bones for 3 days, it's thick and full of goddamn flavor and bone marrow. It's the only Ramen I want to try if I ever visit Japan.

The first time I went back to China with my mom and dad after immigrating, we went out to this one dumpling restaurant with my maternal grandparents, 2 aunts, 2 uncles, and 2 cousins. We stuffed ourselves with seriously the best goddamn dumplings I've ever had. (We're northerners up in Shandong, so we take our dumplings and delicious flour-based foods seriously.) The total? With drinks, tip, and a private room and server, it came out to about $16 converted to RMB. Curse you, floating conversion rate!

Okay, so Dallas actually has a fuckawesome Peking duck place. The restaurant specially orders ducks from New York fattened in the foie gras way. You usually call in 24 hours ahead of time so that your duck can be slow-defrosted in the fridge. When you get there, your duck is deep fried. The manager's son comes out with the duck, cuts off the skin in deliciously brown, crispy pieces and then carves the juicy meat in bite-sized portions. The bony carcass is then taken back to make a rich broth with vermicelli and sour mustard.

It costs like $40 for a duck, but it's well worth it if you go with other people.

    >>49254680

You're supposed to have them separate. For each of those little bing, you put on the sauce, scallions, slices of meat, and slices of skin. Wrap it up, and enjoy! It's crispier and tastier this way, though it requires a super-fatty duck in order for the skin to not dry out.
