What, you didn't see Totoro in Toy Story 3?

They make quite a few references like that.

Edamame Peas and Totoro in Toy Story 3.

It's not as unlikely as you think.

Pixar should make a new Toy Story with figurines.

Toy Story is the only good thing Pixar has ever done. The rest is mediocre.

    read the article

it wasn't as if the designers chose the music because it was personally appealing; it was simply the most fitting for the japanese party scene, or something along those lines

it was for effect, not personal preference

I remember during Miyazaki month, Lassiter said that when they were animating the flying scene of Bug's Life, Lassiter gathered everyone at Pixar together and forced them to watch the first 3 minutes of Castle in the Sky on loop while saying "this is what a good flying scene looks like, do it like this".

Pixar does like anime. I think most western animators do these days. Probably not going to watch Cars 2 though, sinces the first one was fairly boring.

Month of Miyazaki was actually TMC. Every Thursday night they'd play two or three dubbed Miyazaki films, followed by subbed version. It was glorious.

Not just western animators, a lot of people in the arts like anime in some form or another. It's not that surprising if you think about it.
