It's not uncommon for a monthly mangaka to do 2 series. Looking at it from a different perspective, weekly authors need to crank out 20 pages a week, meaning 80 pages a month. I think you're getting a bit too nostalgic with this spin-off. Soul Eater was hardly ever SliceOfLife in Death City. Maybe some SoL chapters, but those were in the middle of actual arcs.
