Naruto is the only one of the three with any sense of a coherent plotline working towards an end.

Bleach is second. It's also clearly planned ahead to some extent, but the ridiculous plotlines and slow pace get in the way and make this difficult to see.

One Piece is just a feel good manga. It's shallow and will continue being perpetuated as long as the money keeps flowing in. It has by far the worst art-style and writing of any current Shonen Jump manga. Today it rides more on the hype of its sheer length and popularity than any sense of quality. The worst part about it however, is the double standard it has between taking itself seriously and being comedic. It is a poor man's Dragon Ball in every sense you can think of.
