Everything besides the original, Zeta, and Char's Counterattack is technically a spin-off or an alternate universe series

But to explain: you need to know that there are different Gundam universes within the franchise. Universal Century (UC) is the original timeline of the series. This is when the first show, Mobile Suit Gundam (also known as Gundam 0079 because the fictional year is UC 0079), takes place.

There are several other Gundam shows that take place in UC. Zeta Gundam, Gundam ZZ and Char's Counterattack are all direct sequels to the first Gundam and feature the same characters: namely, Amuro, Char and the rest of the gang.

Other shows which are not direct sequels (i.e, featuring the same characters) also take place in UC. For instance, Gundam 0080: War in the Pocket, Gundam 08th MS Team, and Gundam Unicorn.

However, there are alternate universes which re-boot the Gundam franchise, and therefore take place in a different timeline. You do not need to know anything about the UC to watch these. These include shows such as Turn A Gundam, Mobile Suit Gundam 00 and G Gundam (among others).

As to where to start... depends on your tastes. If you want to try out the UC, it's a good bet to watch the compilation movies as opposed to the original TV series (which was canceled due to poor ratings anyway, but re-gained popularity with the movies).

If you're more in to super robots, there's Gundam shows for that, despite Gundam as a whole being "real robot".
