For Anime and Manga: Do not touch any of the big 3 (One Piece, Naruto, Bleach in case you don't know)
For Anime:
Cowboy Bebop (ignore usual advice for the dub, the dub is the best ever. Even the director of the series is rumored (good rumors, not baseless) to prefer the dub over sub), Outlaw Star (dub or sub), Trigun (dub or sub), Haruhi season 1 (it won't kill you), Gundam 0079 movie trilogy, MSG: The 08th MS Team (dub or sub), and Samurai Champloo (dub or sub), Berserk (dub or sub).
You may notice a lot of dubs in my first list of reccomendations, that's because subs were either:
A.) The only thing available
B.) Equal or better than the Jap version (rare)
After you complete those, may I suggest something less Seinen/war based:
Haruhi Season 2
The Dissapearance of Haurhi Suzuimiya
Evangelion (whole thing, take the ups and downs)
Spice and Wolf (seasons 1 and 2)
Minami-ke season 1
Gurren- Mutha fuckin- Lagann
Black Lagoon
Excel Saga (knowledge of Anime needed to get half of the jokes, thank god for wikipedia, I watched it before that was popular)
For Manga:
I've read bleach up to chapter 181 recently. It's tempting but knowledge of what awaits keeps me from anticipation
Read Berserk, Vinland Saga, and Hellsing at least.
