[newtype] sure [erinb] it's a bit more complicated than mint juleps ;) [newtype] don't know much about southern cooking [erinb] oh this is just spaghetti sauce, it's not shouthern [newtype] well we don't have 15 guys talking the same time now [erinb] however I could tell you how to make baked beans instead [newtype] no no no... i m not a big bean fan [newtype] mumato is cool [erinb] you would be after having this [erinb] ok ok [erinb] 3 tablespoons of olive oil [erinb] heat it up and sautee a big onion, as many cloves of garlic as you can stand, a green pepper and about 2 teaspoons of salt, also throw in a decent amount of Italian seasoning.. that's what I did today cos I didn't have fresh herbs [newtype] that's it??? [newtype] oh ok [erinb] not quite but this is the 1st stage [newtype] 1st STAGE??? [erinb] let it cook at mid high heat, you know sautee so you stir it up some, until the onions are clear and soft [newtype] how many stages are there? [erinb] well just 2 but the whole thing takes about an hour or more [erinb] this takes about 5 minutes [erinb] then you have to add the tomato stuff.. hangon phone [newtype] this is gonna ba long evening [erinb] ok, you have to do a little preparation [erinb] hehe [erinb] you need a can of whole tomatos, and a can of tomato paste [erinb] they come in lots of different sizes but you need the 1 lb. 2 oz of whole tomatoes and 6 oz paste [erinb] "Good food takes time" [erinb] When you open the whole tomatoes, pour the juice into a small pot and save it [erinb] there's lots of flavor and you dont' want to pour it out [erinb] down the drain Note: I completely forgot to mention you reduce this through the whole time and add it back as concentrated tomato goop at the end. [erinb] Then take the tomatoes and under a faucet just open them and push out the seeds.. they'll make it bitter if left in [erinb] Then you can chop them up some and put them and the tomato paste in with the other stuff [erinb] Also add a tiny bit of black pepper at this point [erinb] Also, add a spalsh of vodka or red wine if you have it - their acidity will help break down the tomatoes into their various flavors. [erinb] Okay now you have to put a lid on it, and turn the heat down to like, very low.. and simmer it for at least 45 minutes, stirring it up from time to time.
